Chraime

A delicious North-African red braised fish.
 
Make sure you have:
     *A delicate, soft white fish (such as Halibut, Sea-Bass, or Cod)
     *Good tomato paste
     *Garlic – mashed (a few spoons)
     *Paprika (sweet, smoked, or spicy) – a few spoons
     *Caraway (crushed or ground) – pinch
     *Fresh chopped cilantro & parsley
     *Lemon
     *Olive or Grapeseed oil
     *Salt & pepper
 
- Cut the fish into portion sizes.
- Heat a heavy skillet on flame, add a good pour of oil
- Saute garlic, paprika, caraway for a minute or two
 - Add a few spoons of kick-ass tomato paste and a bit of hot water to mix
- Keep adding water while stirring, until a thick soup and simmer for a few minutes
- Dip fish pieces in the yummy soup and add more water to almost cover fish
- Toss cilantro and parsley on top, cover loosely and simmer for 10-15 minutes until fish is flaky but not overdone
- Serve on couscous or on it’s on with some fresh bread and fresh parsley & cilantro
